Ingredients

1 bag shells pasta

10 hatch chiles

½ lb thick cut bacon

5 tbs butter

½ cup flour

3 cup whole milk

8 oz pepper jack cheese

8 oz white sharp cheddar cheese

8 oz mozzarella

2 tbs dijon mustard

to taste salt and pepper

optional panko bread crumbs

Directions

Step 1

Roast the hatch chiles in the air fryer for 10-15 minutes @ 400 degrees.

Step 2

Place in plastic bag & let steam for 5-10 minutes. Remove the skins & seeds, chop & set aside.

Step 3

Boil your pasta 3 mins fewer than your package instructions, I boiled mine for 7 minutes since it was going to continue cooking in the oven.

Step 4

In a large pot, add in the chopped bacon & cook until crispy. Remove from pan & set aside.

Step 5

To the bacon fat, add in the butter, once melted, whisk in the flour, once combined, whisk in the milk.

Step 6

In two batches, add in the shredded cheeses, I used pepper Jack, white cheddar & mozzarella BUT any good melting cheese will work in this. Once melted, stir in the mustard, chiles & bacon. At this point, you can serve as is, it was delicious OR bake it.

10 hatch chiles (cooked and peeled)

½ lb thick cut bacon (cooked)

Step 7

If baking, add to baking dish, top with more cheese, chiles, bacon, panko bread crumbs & bake for 15-20 minutes or until golden brown & crispy.
