Ingredients
2 tbsp olive oil
1 shallot, diced
3 garlic cloves, minced or grated
1 ½ jalapenos, diced
3 cup corn
2 package 6oz spinach
1 block cream cheese
1 cup heavy cream
½ cup cotija cheese
¼ cup cilantro, chopped
Salt and pepper to taste
Directions
Step 1
To a large skillet on medium high heat, add the shallots, garlic and jalapeno, cook for 2-4 minutes. Season with salt and pepper as you go.

Add the corn and cook for 5 more minutes.

In batches add in the spinach, mixing into the corn until its all wilted, about 6-8 minutes.

Add the block of cream cheese and mix until fully melted.

Stir in the heavy cream and the cotija cheese, taste and season with salt and pepper if needed.

Stir in chopped cilantro and serve.

Optionally, you can pour the creamed corn/spinach into a baking dish, top it off with your favorite shredded melting cheese and bake in the oven at 350 degrees for about 10 minutes.
