Ingredients

12 Jalapenos

1 block cream cheese

1 cup shredded cheese, Chihuahua, mozzarella, colby jack, pepper jack, etc

1 package bacon

corn tortilla

Pico de Gallo (recipe below)

Directions

Step 1

To the Jalapenos, cut slits into one side, length wise then across on top, essentially cutting a T shape into the jalapenos. Gently open up the jalapeno and remove the insides.

Step 2

Making sure the cream cheese is room temperature, mix it with the 1 cup shredded cheese.

1 cup shredded cheese, Chihuahua, mozzarella, colby jack, pepper jack, etc

Step 3

Stuff the jalapenos with the cream cheese mixture.

Step 4

Wrap the jalapenos with the bacon, thin cut works better, I like to overlap the ends of the bacon under other parts of bacon so that they dont unwrap when cooking. You can also use toothpicks to hold the bacon together.

Step 5

Place the poppers in the air fryer and cook for 15 minutes at 400 degrees making sure to flip/turn halfway through.

Step 6

Serve as is or in tacos.

Step 7

If serving with Pico de Gallo, to a bowl add 2 diced roma tomatoes, 1 diced jalapeno, 1/2 diced white onion, 1/2 cup chopped cilantro, the juice of 1 or 2 limes, salt and pepper to taste.
