Ingredients

For the Mascarpone Brownie:

3 eggs

250 g mascarpone cheese

40 g sugar

2 g salt

10 g cocoa powder

170 g dark chocolate

40 g flour

For the Chocolate Ganache:

180 g chocolate (for the ganache)

180 g boiled heavy cream

👨🍳 1) Prepare Mascarpone Brownie Batter: Preheat the oven to 350°F (175°C). Grease and line a baking pan. In a bowl, beat 3 eggs with 250g mascarpone, 40g sugar, and 2g salt until well combined. Melt 170g dark chocolate using a double boiler or microwave. Once melted, add it to the egg-mascarpone mixture and mix thoroughly. Sift in 10g cocoa powder and 40g flour into the mixture. Gently fold until just combined.

👨🍳 2) Bake the Brownie: Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for about 25-30 minutes or until the top is set and a toothpick inserted into the center comes out mostly clean. Remove from the oven and let it cool completely before adding the ganache.

👨🍳 3) Prepare Chocolate Ganache: Chop 180g chocolate finely and place it in a heatproof bowl. Heat 180g heavy cream in a saucepan until it just starts to boil. Pour the hot cream over the chopped chocolate. Let it sit for a minute, then stir until smooth and glossy.

👨🍳 4) Top Brownie with Ganache: Once the brownie has cooled, pour the chocolate ganache over the brownie layer, spreading it evenly using a spatula.
