Ingredients
1 lb Salmon filet (skinless), cut into 1inch cubes
Canola Oil
2 tbsp olive oil
1 cup flour
¼ cup cornstarch
½ tsp baking powder
2 tsp garlic powder
2 tsp onion powder
1 tbsp tonys
1 tsp smoked paprika
1 tbsp hot sauce
1 cup club soda , or more to thin
salt and pepper, to taste
for the Sauce
½ stick butter
1 tbsp Garlic paste
1 tbsp hot sauce
2 tbsp fresh parsley
Directions
Step 1
In a deep fryer or large skillet heat oil to 350f
Step 2
Wash and dry salmon and cut into bite size pieces. Season with salt and pepper.
Step 3
In a bowl combine flour, cornstarch, garlic powder, onion powder, all purpose, paprika, baking powder, hot sauce, and club soda. Whisk this together to form a batter.
Step 4
Dip salmon bites into wetter batter. Shake off excess batter and carefully dip into oil. Let fry for about 4 minutes each side or until golden brown.
Step 5
Line plate with paper towels and remove from oil.
Step 6
Melt butter in a bowl
Step 7
Add garlic, hot sauce, parsley and shaved Parmesan. Mix well
Step 8
Toss salmon bites in butter. Top with more parmesan and parsley! Enjoy!
