Ingredients

For the Marinade:

4 - 5 tbsp soy sauce

1 tbsp ketchup

1 tbsp mustard

1 tsp vinegar

Seasoning:

2 tbsp paprika powder

½ tbsp black pepper

½ tbsp sugar

½ tbsp garlic powder

½ tbsp onion powder

½ tbsp ground coriander

¼ tbsp ground cumin

½ tsp thyme

½ tbsp oregano

½ tbsp cayenne pepper (optional)

2 tbsp nutritional yeast

For the Tofu:

2 blocks of tofu (1 smoked, 1 regular, or 2 regular)

3 - 4 tbsp olive oil

For the Sauce:

1 cup plant based yogurt

½ cucumber, shredded

2 cloves garlic, minced

Salt to taste

For Assembly:

Flatbreads

Salad of choice (e.g., lettuce, tomatoes, onions, cucumbers)

1. Prepare the Marinade:

* In a bowl, combine soy sauce, ketchup, mustard, sugar, paprika powder, black pepper, garlic powder, onion powder, ground coriander, ground cumin, thyme, oregano, cayenne pepper (if using), vinegar, and nutritional yeast. Mix well until fully combined.

2. Prepare the Tofu:

* Shred one block of tofu and slice the other block into thin strips. If using both regular tofu, do the same for both blocks.

* In a hot nonstick pan, add the shredded and sliced tofu. Cook until it starts to dry and crisp up a little.

3. Crisp the Tofu:

* Add 3-4 tbsp olive oil to the pan with the tofu. Continue to cook until the tofu crisps up more.

* Once crispy, add the prepared marinade to the pan. Reduce the heat and let the tofu absorb the marinade. Continue to cook until the tofu is crispy but still juicy.

4. Prepare the Sauce:

* In a bowl, combine plant-based yogurt, shredded cucumber, minced garlic, and salt. Mix well.

5. Assemble the Flatbreads:

* Spread a generous amount of the yogurt-cucumber sauce on each flatbread.

* Add a portion of the crispy marinated tofu on top.

* Top with your salad of choice.
