Ingredients

2 medium sized zucchinis (grated)

1 small onion (sliced)

2 cloves of garlic (minced)

½ cup chickpea flour (or more if needed)

Season to taste

Olive oil for frying

Step 1
Preparation: Grate zucchinis and let them sit in a colander with salt for 10 minutes to remove excess moisture. Squeeze out the liquid. Combine grated zucchini, sliced onion, minced garlic, chickpea flour, and seasoning in a large bowl. Mix well.
Step 2
Cooking: Heat olive oil in a skillet over medium heat. Spoon 2 tablespoons of the zucchini mixture into the skillet for each fritter and flatten slightly. Cook for 3-4 minutes on each side until golden brown.
Step 3
Serve: Transfer the fritters to a paper towel-lined plate to remove excess oil. Serve warm with tzatziki sauce on top.
