Ingredients

2 cups Black beans

8 Tortillas (corn or flour)

1 medium Onion (chopped)

3 cloves Garlic (minced)

1 Red bell pepper (diced)

1 Fresh chili or jalapeno (minced (optional))

1 tsp Seasoning (e.g., cumin, chili powder, Mexican spice blend)

1 tbsp Chipotle or paprika paste

1 cup Vegan cheese (shredded)
Directions
Step 1
Prepare Filling: Sauté onion, garlic, and bell pepper in a skillet. Add black beans and cook until heated. Stir in the seasoning, chili or jalapeno, and chipotle or paprika paste. Mash the beans roughly.
Step 2
Assemble Tacos: Preheat your oven to 200C/400F. Fill each tortilla with the bean mixture and sprinkle with vegan cheese.
Step 3
Bake: Place the filled tortillas on a baking sheet and brush the tops with a bit of oil. Bake for 15-20 minutes or until the tortillas are golden brown and crispy.
Step 4
Serve: Garnish your tacos with salsa, guacamole, or chopped cilantro and enjoy immediately.
