Ingredients

6 large Onions (sliced)

4 cloves Garlic (minced)

2 tbsp Olive oil

2 tbsp Vegan butter

1 tsp Sugar

Thyme (to taste)

2 Bay leaves

2 Vegetable broth cubes

2 cups Water

2 tbsp All purpose flour

2 tbsp Worcestershire sauce (make sure it's vegan)

Salt and Pepper to taste

8 slices Baguette bread

1 ½ cups Shredded vegan cheese

Step 1
Prepare Onions: In a large pot, heat the olive oil and vegan butter over medium heat. Add the onions, sugar, and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until the onions are caramelized.

Add Herbs and Garlic: Stir in the garlic, thyme, and bay leaves. Cook for an additional 2-3 minutes.

Thicken Soup: Sprinkle the flour over the onions and stir well to combine. Cook for another 2-3 minutes.

Prepare Broth: Add the vegetable broth cubes, water, and Worcestershire sauce to the pot. Stir well and bring the mixture to a boil. Reduce heat and let it simmer for 10-15 minutes.

Season: Remove the bay leaves and season with salt and pepper according to your preference.
