Ingredients

1 large onion (finely chopped)

7 oz button mushrooms, sliced

Salt (to taste)

2 tablespoons olive oil

2 cloves garlic (minced)

2 tablespoons butter

7 oz oat cream

Plant based Parmesan (to taste, plus extra for serving)

14 oz pasta of your choice

¼ Reserved pasta water (about cup or 60ml)

Fresh parsley (chopped, for garnish)

Directions

Step 1

Prepare the Ingredients: Start by preparing all your ingredients. Chop the onion finely, slice the mushrooms, mince the garlic, and grate the plant-based Parmesan. Set everything aside.

Step 2

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve about 1/4 cup of the pasta water for later. Drain the pasta and set aside.

Step 3

Sauté the Vegetables: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onions and sliced mushrooms. Season with salt to taste. Sauté until the onions are translucent and the mushrooms are golden brown, about 5-7 minutes.

Step 4

Add Garlic and Butter: Once the mushrooms are golden, add the minced garlic and butter to the skillet. Stir continuously for about 1-2 minutes, or until the garlic is fragrant but not browned.

Step 5

Add Oat Cream: Reduce the heat to low and pour in the oat cream. Stir well to combine and allow the mixture to simmer gently for a few minutes until slightly thickened.

Step 6

Incorporate the Plant-Based Parmesan: Sprinkle the grated plant-based Parmesan into the skillet. Stir continuously until the cheese is melted and the sauce is creamy.

Step 7

Combine with Pasta: Add the cooked pasta to the skillet. Pour in the reserved pasta water to help emulsify the sauce and coat the pasta evenly. Gently mix everything together until the pasta is well coated with the creamy mushroom sauce.

Step 8

Garnish and Serve: Transfer the pasta to serving plates. Garnish with freshly chopped parsley and an extra sprinkle of plant-based Parmesan cheese. Serve immediately and enjoy your enhanced creamy mushroom pasta with garlic butter!
