Ingredients

1 ½ cups warm water (355 ml, lukewarm)

1 tablespoon dry yeast (optional)

4 - 5 cups flour (500 625 grams, adjust as needed)

Salt (to taste)
For the Filling

14 oz spinach (400 grams, finely chopped )

1 onion (finely diced)

7 oz vegan Feta cheese (200 grams, crumbled)

1 tablespoon red paprika flakes

1 teaspoon black pepper

1 teaspoon tomato paste

Directions
Step 1
For the Dough
Step 1
In a mixing bowl, combine lukewarm water with yeast (if using).

Gradually add flour and salt until you have a soft, slightly sticky dough.
Step 3
Cover the dough and let it rest for at least 30 minutes to allow it to rise and become more pliable.

For the Filling
Step 1
In a bowl, mix the finely chopped spinach, finely diced onion, crumbled vegan Feta cheese, red paprika flakes, black pepper, and tomato paste.

Massage the filling with your hands to ensure even distribution of the seasonings and to soften the onions and spinach as you mix.

For the Gözleme

Divide the rested dough into 7 equal portions.
Step 2
On a lightly floured surface, roll each portion into a thin circle, aiming for about 10.5 inches in diameter.

For the Filling and Closing
Step 1
Place 1-2 tablespoons of the prepared filling onto one half of each dough circle, leaving a small border around the edges.

Fold the other half over the filling to create a half-moon shape.
Step 3
To seal the gözleme, press the edges firmly together. If needed, wet your fingers slightly with water to help with sealing.

For the Cooking

Heat a non-stick pan over medium-high heat.
Step 2
Place each gözleme in the dry pan and cook for approximately 1-2 minutes per side until it becomes golden brown and crispy.
Step 3
You can optionally brush a small amount of olive oil on the gözleme during cooking for added flavor.
Step 4
For the Serving
Step 1
Once cooked, brush both sides of the gözleme with olive oil.
Step 2
Serve them while still warm or at room temperature. Gözleme can be enjoyed on its own or paired with a fresh salad. Enjoy your meal!
