Ingredients

1 small cabbage (finely diced)

1 cucumber (finely diced)

1 bunch green onions (sliced)

For the Dressing

1 - 2 avocados

2 Lemon Juice

¼ cup olive oil

2 cloves garlic

1 cup fresh basil

1 cup spinach

⅓ cup nutritional yeast

¼ cup cashews

1 cup cilantro

2 tbsp agave

1 tsp salt

1 tsp pepper

Water (if needed)

Tortilla chips

Directions

Step 1

In a large bowl, combine the finely diced cabbage, cucumber, and sliced green onions.

For the Dressing

In a blender or food processor, combine the avocados, lemon juice, olive oil, garlic, basil, spinach, nutritional yeast, cashews, cilantro, agave, salt, and pepper.
