Ingredients

2 cups fresh corn kernels (you can also use canned or frozen corn, drained (300 g))

1 cup all purpose flour (adjust as needed (120 g))

3 tablespoons cornstarch

1 cup water (adjust as needed (240 ml))

2 green onions (finely chopped)

2 cloves garlic (minced)

1 teaspoon ground coriander

1 teaspoon turmeric powder

Salt and pepper to taste

For the Batter:

In a large mixing bowl, combine the all-purpose flour and cornstarch. Add the water gradually while stirring until you get a thick batter. The batter should be thick enough to coat the corn and other ingredients, but not too runny.

Add the corn kernels, green onions, minced garlic, ground coriander, turmeric powder, salt, and pepper. Mix well until all ingredients are evenly coated with the batter.

For the Oil:

In a large skillet or frying pan, heat enough oil over medium heat to deep-fry the fritters. The oil should be around 350°F (175°C).

For the Fritters:

Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon. Do not overcrowd the pan; fry in batches if necessary.

Fry until golden brown and crispy, about 3-4 minutes on each side. Use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil.
