Ingredients

For the Bhaji Mixture

3 - 4 large onions (sliced)

1 handful coriander (chopped)

1 green chili (chopped)

Salt to taste

1 tsp ground cumin

1 tsp ground coriander

½ tsp ground turmeric

1 cup chickpea flour

4 tbsp water

For the Chutney Sauce

1 cup coriander leaves

½ cup mint leaves

1 green chili

1 clove garlic

1 inch piece ginger

1 Juice of lemon

½ tsp ground cumin

Salt to taste

½ cup vegan yogurt (optional)

Step 1

For the Bhaji Mixture

Step 1

Prepare the Bhaji Mixture: In a bowl, combine the sliced onions, chopped coriander, chopped green chili, salt, ground cumin, ground coriander, ground turmeric, chickpea flour, and water. Mix well to form a thick batter.

Step 2

Fry the Bhajis: Heat oil in a frying pan. Drop spoonfuls of the bhaji mixture into the hot oil and fry until they turn golden brown.

Step 3

For the Chutney Sauce

Step 1

Make the Chutney Sauce: In a blender, combine the coriander leaves, mint leaves, green chili, garlic, ginger, lemon juice, ground cumin, salt, and optional vegan yogurt. Blend until smooth.

Step 2

Serve: Serve the hot Onion Bhajis with the freshly made chutney sauce.
