2 tsp cornstarch

6 cups chicken stock
2 cups water
2 green onion(cut into thirds)
4 slices ginger
3 cloves garlic(smashed)
4 dried shiitake mushrooms
1 ½ tbsp fish sauce
1 tbsp sesame oil
Salt to taste
½ tsp white pepper
½ tsp msg
½ tsp sugar

Step 1
In a bowl combine all wonton ingredients. Mix in one direction until you see streaks on the side of the bowl.

Step 2
Make wontons by placing 1 tsp of filling in the center of the wrapper. Using water to bind, fold the wonton in half to make a triangle then bring each end together and pinch.

Step 1
Combine chicken stock, water, scallions, ginger, garlic, and shiitake mushrooms.

Let simmer for 30 minutes then remove the aromatics. Slice shiitake mushrooms for serving.

Boil bok choy for 2 minutes then blanch in cold water.
