Ingredients

1 lbs ground beef

⅓ cup minced onions

1 tbsp soy sauce

1 tbsp Worcestershire sauce

2 tbsp Shaoxing wine

½ tsp salt

¼ tsp black pepper

½ cup cheddar cheese

Sauce

3 tbsp Japanese Mayonaise

3 tbsp ketchup

1 tbsp mustard

2 tbsp diced pickles

1 tbsp chili oil

1 tsp black vinegar

1 tsp sesame oil

½ tsp sugar

Salt to taste

Pepper to taste

Dough

450 grams dumpling flour

½ tsp salt

1 tsp sugar

1 tsp yeast

1 cup room temp water

Baos

3 tbsp neutral oil

¼ cup water

Toasted sesame seeds

Step 1

In a bowl, combine all ingredients making sure to mix in one direction

Step 1

Combine all ingredients in a bowl

3 tbsp Japanese Mayonaise

3 tbsp ketchup

1 tbsp mustard

2 tbsp diced pickles

1 tbsp chili oil

1 tsp black vinegar

1 tsp sesame oil

½ tsp sugar

Salt to taste

Pepper to taste

Dough

Step 1

In a bowl combine flour, salt, sugar, and yeast and slowly pour in water until a shaggy dough comes together.

Step 2

Knead until smooth and let rest for 45 minutes.

Step 3

Once the dough has doubled in size, divide in half and roll into a rope.

Step 4

Cut the rope into 20 gram pieces and roll the pieces into a ball.

Flatten the dough ball and roll into a thin disk.

Step 6

Place about 2 tablespoons of filling in the center of the wrapper and fold using your thumbs and index fingers to create pleats(try to get 18 pleats).

Step 1

Fry the buns in oil until golden brown on the bottom and pour in water.

Cover with a lid and steam for 6-7 minutes.

Remove lid and let residual water evaporate.

Step 4

Sprinkle some cheese to create a cheese crust.

Once the cheese skirt is brown and crispy, sprinkle black sesame seeds and scallions on top.
