Ingredients
For the Beef Pho
2 ½ lbs beef bones
2 ½ lbs oxtail(you can use short rib or brisket)
1 large yellow onion
3 shallots
2 4inch pieces ginger
40 g rock sugar
¼ cup fish sauce+more to taste
20 cups water
3 star anise
1 stick cinnamon
1 black cardamom pod
4 cloves
1 tbsp fennel seed
1 tbsp coriander seed
Salt to taste
1 tbsp mushroom powder
Pho rice noodles
Thinly sliced beef
For The Garnish
Scallions
Cilantro
Sliced onion
Thai Basil
Bean sprouts
Jalapeño
Lime
Sriracha
hoisin sauce
Directions
Step 1
In a pot cover beef bones and ox tail with water and boil for 20 minutes to get rid of the scum.

Drain the beef and thoroughly rinse under cold water.
Step 3
Roast onions, shallots, and ginger over an open fire or broiler. Remove and burnt parts and skins that might make the soup bitter and smash the ginger to release the flavor.

In a pot, add the beef, aromatics, rock sugar and fish sauce. Add water and bring to a simmer. Simmer on low for 5-6 hours or until the ox tail is soft.

5. Toast the spices in a dry pan on medium heat until fragrant(2-3 minutes). Add the spices to the soup in the final 45 minutes of cooking.

6. Take out the ox tail and strain the soup. Season with salt and mushroom powder. Taste to see if it needs any other seasonings like fish sauce or sugar.

7. Pour boiling hot water over the rice noodles and make yourself a bowl of pho adding any garnish you like.
