Ingredients

To Make Cajun Seasoning Mix

½ tsp cayenne pepper

1 tsp salt

1 tsp black pepper

½ tsp garlic powder

2 tsp Italian seasoning

2 tsp smoked paprika

To Make the Shrimp

1 lb Shrimp, peeled and deveined

2 tsp of Vegetable oil

3 cloves of Garlic, minced

2 tsp Fresh Ginger, minced

8 tbs of Butter

2 tbs of Fish Sauce

1 Lime, juiced

2 tbs of Fresh Cilantro, coarsely chopped

Directions

To Make Cajun Seasoning Mix

Step 1

In a small bowl, mix all of the dry spices and set aside.

To Make the Shrimp

Step 1

In a separate bowl, toss the vegetable oil, shrimp and 1/2 tsp cajun seasoning.

Step 2

2) Heat a large frying pan or skillet on high. When it gets hot, toss in the shrimp and cook for 1-2 minutes or until charred at the edges.

Step 3

3) Turn the heat down to medium and add the butter. Once foaming, add the garlic and ginger, and saute for 2 minutes, then add the spices and cook for a minute, while stirring. Add shrimp and simmer for another 2-3 minutes until the shrimp are cooked through, then add the lime juice and fish sauce. Pour into a serving bowl and top with the chopped cilantro.

Step 4

4) Serve on top of steamed rice or with a baguette to mop up the buttery sauce.
