Ingredients
For the Waffles
1 cup Arrowhead Mills® Buckwheat Pancake & Waffle mix
1 egg beaten, or egg substitute
1 tbsp oil
1 tsp honey
1 cup milk or water
For the Chicken
1 ½ lbs Chicken Breast Tenders
½ cup Buttermilk
2 cups Pecans, halved or in pieces
½ cup All Purpose Flour
1 tsp Salt
1 tsp Dried Oregano
1 tsp Ground Cumin
¼ tsp Onion Powder
¼ tsp Garlic Powder
⅛ tsp Ground Black Pepper
Olive Oil Spray
For the Sriracha Honey
¼ cup Honey
2 tbs Sriracha

Directions
For the Waffles
Step 1
Preheat waffle iron.
Step 2
Stir ingredients to get rid of large lumps, batter may be slightly lumpy. Let batter stand for 2 minutes before cooking.
Step 3
Bake batter in a hot waffle iron according to waffle maker manufacturing instructions or until steaming stops and waffles are golden brown.
For the Chicken
Step 1
Start by placing the chicken in the buttermilk and set aside.
Step 2
Meanwhile, heat the oven to 375°F and spray a rimmed baking sheet with olive oil spray.
Step 3
Combine the pecans, flour, salt, oregano, cumin, onion powder, garlic powder, and pepper in the bowl of a food processor and pulse until coarsely ground.
Step 4
Place the nut mixture in a low flat bowl or baking dish.
Step 5
Remove a piece of chicken from the buttermilk, letting any extra buttermilk drip off and roll the chicken strip in the nut mixture, pressing the coating into the chicken.
Step 6
Once coated place on the prepared baking sheet. Repeat all the pieces of chicken, one at a time, in the nut mixture.
Step 7
Keep the chicken evenly spaced in the pan, don't crowd them. Lightly spray the pieces with olive oil spray.
Step 8
Place in the middle rack of the preheated oven and bake until the coating is lightly browned, about 8-10 minutes.
Step 9
Remove from the oven, and use a spatula to turn the chicken over and cook until golden, about 8-10 minutes. Be careful to not burn the nuts.
For the Sriracha Honey
Step 1
In a small bowl whisk together the honey and Sriracha sauce and drizzle over chicken and waffle and serve. OPTIONAL: Add more Sriracha if you want it spicier.
