Ingredients

8 oz bacon, diced

1 yellow onion, diced

1 lb ground Italian sausage

1 tbsp minced garlic

½ tsp onion powder

½ tsp garlic powder

1 tsp Italian seasoning

1 tsp smoked paprika

Salt and pepper to taste

¼ cup all purpose flour

1 - 1 ½ lbs yellow potato’s, cubed

½ bunch kale, rinsed and chopped

5 cups chicken broth

2 cups heavy cream

Parmesan (for topping)

Directions

Step 1

Sauté your diced bacon on medium heat for 5-10 minutes or until it’s crispy. Remove from pan and set aside.

Step 2

In the same pot, sauté your diced onion for 3 minutes, add your sausage and brown. Now add garlic, seasonings, and flour. Stir and let this cook for about 3 minutes.

Salt and pepper to taste

¼ cup all purpose flour

Step 3

Add your kale, potatoes, chicken broth and heavy cream. Turn heat to high, bring to a boil, lower the heat and let simmer on a low boil for 10-15 minutes or until potatoes are fork tender. If you cut them thick they may take a bit longer.

2 cups heavy cream

Step 4

Now you can add your cooked bacon back to the pot. This is when I do a taste test to see if any additional seasonings are needed! Add more as needed.

Step 5

Top with Parmesan and enjoy!
