Ingredients

2 tbsp olive oil

½ yellow onion, diced

3 large jalapeños, deseeded and diced

30 oz southwest style corn, drained

4 oz green chilis

¼ cup green onions, diced

¼ cup cilantro, chopped

1 cup sour cream

8 oz cream cheese

½ tsp garlic powder

½ tsp cumin powder

½ tsp tajin

½ tsp chicken bouillon powder

8 oz mozzarella cheese, shredded

8 oz pepper jack cheese, shredded

Preheat oven to 350°

In an oven safe pan on medium heat, add your olive oil, diced onion, and jalapeños. Sauté for 2-3 minutes.

Add your corn, green chilis, green onions, cilantro, sour cream and cream cheese. Let this simmer until cream cheese is melted, (about 5 minutes) mix until well combined.

Now you can add your seasonings, half of your cheeses (4oz of each) and stir.

Top with remaining cheese, bake for about 15 minutes, broil for 1-2 minutes. Be careful it can burn easily!
