Ingredients

For the street corn

10 oz steamed or canned corn

1 cup cottage cheese, blended until smooth

¼ cup mayo

⅔ cup cotija cheese

½ diced red onion

2 diced jalapeños (deseeded)

¼ cup chopped cilantro

1 Juice of lime

1 tsp tajin

Salt to taste

For the beef

1 lb lean ground beef

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1 tsp cumin

1 tsp Kinders tequila lime (optional)

Salt and pepper to taste

½ cup water

For the sweet potatoes

3 - 4 sweet potatoes, peeled and diced

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

For the additional toppings

8 oz Cheddar cheese

Directions

Step 1

To your diced sweet potatoes, add your olive oil and seasonings. Air fry for 15 minutes on 375°

3 sweet potatoes, peeled and diced

2 tbsp olive oil

1 tsp cumin

Salt and pepper to taste

Step 2

Brown your ground beef in a skillet on medium-high heat. Add in your seasonings and water, mix and cover on medium-low for about 10 minutes.

Step 3

In a bowl, add in your corn, cottage cheese, mayo, veggies and seasoning. Mix well.
