Ingredients

For the Tuscan crab sauce

4 tbsp butter

2 cups heavy cream

1 tsp old bay

½ tsp garlic powder

½ tsp ground mustard

8 oz jumbo lump crab meat

1 cup chopped spinach

¼ cup diced sundried tomatoes

¼ cup grated Parmesan

½ tsp lemon zest

For the Salmon

4 salmon filets

4 tbsp olive oil

½ tbsp old bay

1 tsp garlic powder

1 tsp onion powder

For the mashed potatoes

5 lbs yellow potatoes

½ cup sour cream

1 ½ cup hot milk or heavy cream

4 tbsp butter

Salt and pepper to taste

For the asparagus

1 bunch asparagus

1 tbsp olive oil

1 tsp garlic powder

1 tsp lemon pepper

1 tsp minced garlic

Directions

Step 1

Peal and cut potatoes, boil in salted water for 45 minutes.

5 lbs yellow potatoes

Step 2

Cut skin off salmon, drizzle with about 2 tbsp of olive oil and season top and bottom evenly. Add olive oil to hot pan (medium heat) and fry on each side for about 6 minutes, or until the inside is flaky. Remove from pan, set aside.

Step 3

In the same pan, add in ingredients for your crab sauce. Simmer on medium low heat until it thickens.

¼ cup grated Parmesan

Step 4

Once your potatoes are fork tender, drain from water and you can either mash them, mix with mixer, or use a ricer. Add in remaining ingredients and mix until smooth.

1 ½ cup hot milk or heavy cream

Salt and pepper to taste

Step 5

Cut off the white bottoms from the asparagus spears. Add olive oil and asparagus to hot pan. Once they are bright green add in your seasoning and garlic. Pan fry for about 5 minutes.
