Place chicken breast in a pot of water. Add onion, bay leaves, and chicken bouillon. Allow to boil for 15 minutes.

Start to prepare your sauce. In a hot pan char your tomatoes, onion, and garlic cloves.

Once charred add them to your blender. Along with 3 chipotle peppers, chicken bouillon, oregano, and a little bit of water. Blend well.

In a pan sauté some white onion. Once sauteed add your shredded chicken and sauce.
