Ingredients

For the chicken

3 thinly sliced chicken breasts

1 tsp garlic powder

1 tsp onion powder

1 tsp Kinders grilled chicken seasoning (optional)

1 tsp lemon pepper

Olive oil

For the filling

8 oz softened cream cheese

½ cup buffalo sauce

4 oz shredded cheddar cheese

4 oz shredded mozzarella cheese

1 Ranch seasoning pack

For the breading

1 cup flour

2 tsp garlic powder

2 tsp onion powder

1 tsp Cajun seasoning

1 tsp paprika

2 cups Panko

4 eggs

Cooking oil for frying

Directions

Step 1

Season your chicken and pan fry on medium heat for about five minutes on each side. Once they’re done, let them cool and then dice them up into small pieces.

Step 2

In a mixing bowl at your diced chicken, softened cream cheese (if you forgot to take it out of the refrigerator just microwave it for about 45 seconds and it should be soft enough), buffalo sauce, cheeses, and ranch seasoning pack. Mix well. If your mixture seems too runny, you can add more cheese or a bit of Panko or breadcrumbs.

½ cup buffalo sauce

4 oz shredded cheddar cheese

4 oz shredded mozzarella cheese

1 Ranch seasoning pack

Step 3

In three separate bowls, add your flour, Panko and eggs. Season the flour and whisk the eggs.

1 tsp Cajun seasoning

1 tsp paprika

2 cups Panko

Step 4

Form your mixture into 2 inch balls. If you use gloves and add a bit of oil to them that makes it a bit easier. If not, that’s fine as well just might be a little bit stickier. You should have 8-10 balls.

Step 5

Now coat your buffalo chicken balls in the flour, eggs, and the Panko. Freeze for 20 minutes.

Step 6

Add cooking oil to large pot, at least 2 inches high. Heat to 325° and you can drop your chicken bombs in, careful not to overcrowd. These cook fast so be careful. It should only take 3 to 5 minutes.

Step 7

Let them cool and enjoy!!
