Ingredients
1 5 pound whole chicken, spatchcocked
Fire and Smoke Society go to seasoning blend
1 ½ pounds small potatoes (halved)
3 small onions (quartered)
Foil pan
Salt and pepper to taste
1 stick of butter
½ cup of honey
2 teaspoons of dried garlic
2 tablespoons of avocado oil
Directions
Step 1
Start by prepping the veggies. Slice the potatoes in half and quarter the onions, then add them to a foil pan. Season the veggies with salt and pepper to taste.
Step 2
Next, it's time to prep the chicken. Using kitchen shears, remove the spine of the chicken and flatten it out. This process is known as spatchcocking, and it helps the chicken cook more evenly on the grill.
Step 3
Season both sides of the chicken with Fire and Smoke Society go-to seasoning blend. To get the most flavor out of the seasoning, pull up the skin of the chicken and season both under and on top of the skin.
Step 4
Preheat the grill to 300 degrees Fahrenheit. Place the foil pan with the veggies on the bottom grate of the grill and place the seasoned chicken directly over the vegetables. This allows the chicken to cook on top of the veggies, allowing the juices to drip down and flavor the veggies.
Step 5
Grill the chicken until it reaches an internal temperature of 155 degrees Fahrenheit. This should take about 45-60 minutes, depending on the size of your chicken and the heat of your grill. Use a meat thermometer to check the temperature of the chicken.
Step 6
While the chicken is cooking, it's time to make the honey garlic sauce. In a small saucepan, combine the butter, honey, dried garlic, and avocado oil. Heat the mixture until it becomes fragrant and the butter is melted, then remove it from heat.
Step 7
Once the chicken reaches 155 degrees Fahrenheit, baste it with the honey garlic sauce. Brush the sauce generously over the chicken, making sure to get it into all the nooks and crannies. This will help the chicken stay moist and add extra flavor.
Step 8
Continue cooking the chicken until it reaches an internal temperature of 165 degrees Fahrenheit. This should take another 10-15 minutes, depending on the size of your chicken.
Step 9
Once the chicken is fully cooked, remove it from the grill and let it rest for 10 minutes before slicing. This allows the juices to redistribute throughout the chicken, making it more tender and juicy.
Step 10
Serve the spatchcock honey garlic chicken with the roasted potatoes and onions on the side. The potatoes and onions should be cooked through and lightly browned, with a delicious flavor from the chicken juices. Enjoy!
