5 lb prime rib

Cooking oil

Salt, pepper, and garlic powder ((for seasoning the prime rib))

2 lbs golden potatoes

Potato slayer seasoning (for the frites)

Chimichurri sauce (for serving)

Directions

Step 1

Preheat your smoker to 250 degrees. This temperature is ideal for smoking prime rib, as it will allow the meat to cook slowly and evenly, while also developing a smoky flavor.

Step 2

Take the prime rib out of the refrigerator and let it sit at room temperature for about 30 minutes. This will allow the meat to warm up slightly and cook more evenly when it's in the smoker.

Step 3

Once the smoker has reached the desired temperature, it's time to season the prime rib. In a small bowl, mix together the salt, pepper, and garlic powder. Rub this seasoning all over the prime rib, making sure to cover every inch of the meat.

Next, slather the seasoned prime rib with cooking oil. This will help to keep the meat moist while it's cooking, and also help to develop a crisp crust on the outside

In a large bowl, toss the potatoes with the potato slayer seasoning until they are evenly coated. This will help to add flavor to the fries and make them crispy when they're fried.

Heat up a large pot of oil to 350 degrees. You can use a deep fryer or a heavy-bottomed pot on the stove. Once the oil is hot, carefully drop the seasoned fries into the pot and fry them until they are golden brown and crispy, about 4 to 5 minutes.
