Ingredients
3 longaniza sausages
3 hoagie rolls
8 oz Oaxaca shredded cheese
6 eggs
2 tbsp butter
Green salsa for serving
Directions
Step 1
Preheat your grill to 350 degrees. Make sure it's hot enough before you start cooking the sausages.
Step 2
Once the grill is hot, place the longaniza sausages on the grill and sear them until nicely charred. This should take about 3-4 minutes per side. Use tongs to turn the sausages over and make sure they cook evenly.
Step 3
Once the sausages are done, remove them from the grill and let them cool for a minute or two. Then, cut them in half butterflied so that they'll fit nicely in the sandwich.
Step 4
Heat a large skillet on the grill. You can use the same skillet you used to cook the sausages, or a new one if you prefer. Make sure the skillet is hot before you start cooking.
Step 5
Sear the sausages on medium heat on both sides until they are nicely charred. This should take about 2-3 minutes per side. Again, use tongs to turn the sausages over and make sure they cook evenly.
Step 6
While the sausages are cooking, crack 6 eggs into a bowl and whisk them together. Add 2 tbsp of butter to the skillet and let it melt. Once the butter has melted, pour in the eggs.
Step 7
Cook the eggs on low heat, stirring occasionally, until they are fully cooked. This should take about 5-7 minutes. Once the eggs are done, remove them from the skillet and set them aside.
Step 8
Shred the Oaxaca cheese. You can use a box grater or a food processor to shred the cheese. Make sure it's nicely shredded so it'll melt evenly in the sandwich.
Step 9
Cut the hoagie rolls in half lengthwise. Lay the bottom halves of the rolls out on a clean work surface.
Step 10
Add a layer of shredded cheese on top of the bottom half of each roll. Then add the longaniza sausages on top of the cheese.
Step 11
Next, add the cooked eggs on top of the sausages. Make sure to spread the eggs out evenly.
Step 12
Finally, add another layer of shredded cheese on top of the eggs. Place the top half of the rolls on top of the cheese.
Step 13
Place the sandwich on the skillet and place another skillet over the top to flatten out the bread. This will help the sandwich cook evenly and make it nice and crispy. Cook the sandwich for about 3 minutes on each side.
Step 14
Remove the sandwich from the skillet once the cheese is melted and the bread is nicely crispy. Cut the sandwich into individual portions and serve with green salsa on the side.
