Ingredients

2 lbs large shrimp

4 oz prosciutto sliced in half

1 stick of butter

¼ cup honey

1 tsp sweet rub

Directions

Step 1

Clean the shrimp by removing the shells, legs, and tails. Then, devein the shrimp by making a shallow cut along the back and removing the dark vein. Rinse the shrimp and pat dry with paper towels.

Step 2

Season the shrimp with the sweet rub seasoning. Make sure to evenly coat each shrimp. Let the shrimp sit for about 10 minutes to allow the flavors to fully penetrate.

Step 3

Cut the prosciutto into half-length pieces. Then, wrap each seasoned shrimp in half a slice of prosciutto. Make sure that the prosciutto fully covers the shrimp and that the edges are secured.

Step 4

Season the wrapped shrimp with the sweet rub seasoning again. This will add extra flavor to the prosciutto and shrimp.

Step 5

In a small saucepan, melt the butter over low heat. Add the honey and stir until well combined. Set aside. This mixture will be used as a baste for the wrapped shrimp.

Step 6

Preheat your smoker to 250°F. Place the wrapped shrimp on the smoker.

Step 7

Smoke the wrapped shrimp for 20 minutes. This will infuse them with smoky flavor and cook them through.

Baste the wrapped shrimp with the honey butter mixture. Make sure to brush the mixture evenly onto each wrapped shrimp.

Continue smoking the wrapped shrimp until the sauce sets, about 10-15 minutes. Keep an eye on the wrapped shrimp and make sure that they do not burn.
