Ingredients

6 boneless skinless chicken thighs

3 brioche hamburger buns

6 slices cheddar cheese

½ cup Frank’s red hot wing sauce

9 pickle chips

½ cup pork panko (sub regular panko)

Directions

Step 1

Preheat your grill to 350 degrees, you want to create a 2 zone cooking surface. One cool one hot.

Step 2

Coat the chicken with olive oil, add your favorite seasoning. I used my smokin buffalo blend.

Step 3

Now in a bowl add panko, 1 tbsp buffalo seasoning and mix well. Now place the chicken in the mixture and pack it in really well. Once all chicken is coated place it on the grill opposite of the heat. Close and let it cook.

Step 4

Once it reaches an internal temperature of 165 and coat the chicken with wing sauce. Then add the cheddar cheese! Let the cheese melt before removing the chicken, toast the buns then assemble!

Step 5

Add mayo to the bottom bun, wing sauce to the top bun, add pickles, then the chicken and finally the top bun.

Notes

I recommend a meat thermometer to accurately read the internal temperature of the chicken thighs.
