Ingredients
2 lbs chorizo (beef or pork is fine)
3 medium golden potatoes
¼ sweet onion
5 eggs
¼ cup crema Mexicana ( sub sour cream)
½ cup shredded cheese (your choice)
For the Guacamole Salsa
2 hass avocados
2 garlic cloves
5 tomatillos
5 Juice of lemons
¼ bunch cilantro
2 serrano peppers
2 jalapeño peppers
Salt to taste
Directions
Step 1
Start off by preheating your skillet to medium-high heat.
Step 2
Let’s prep the potatoes by cutting the potatoes into cubes, then cut up your onions, rough chop those. Then remove the casings from the chorizo, unless it comes without it. Start off by crisping up the chorizo on the pan, once that is done remove it from the pan and set it aside.
Step 3
Then it’s time to work on your potatoes! Throw about 1 tbsp oil into your pan then add your potatoes and onions, then seasoning those with salt and pepper, let them roast until fork-tender.
Step 4
Stir them once in a while so they don’t burn and then add the chorizo back in and incorporate everything.
Step 5
After everything is mixed add your eggs and combine those as well. Then add the cheese and turn off the fire and let the cheese sit in there while everything is cooling down. The steam will help the cheese get nice and melted.
Step 6
Then it’s time to assemble, heat up your burrito tortilla and add sour cream as the base, the chorizo mixture is next then, the guacamole. Then it’s time to enjoy!
