Ingredients
1 pack chicken chili verde sausages
2 large poblano peppers
8 oz queso manchego
4 medium flour tortillas
Pickled onions
Fresh Guacamole
Directions
Step 1
Preheat the grill to 350 degrees
Step 2
Cut the tops off the poblano peppers. Remove all the seeds, now cut the queso manchego into strips and stuff the peppers with it.
Step 3
Grill the peppers on all sides until nicely charred. Remove them and chop the peppers with the cheese.
Step 4
Now open up the pack of sausages and grill them about 2 min per side. Once those are charred, remove and split them open. You wanna butterfly them. Don’t cut them into 2 pieces, just to open them up.
Step 5
Now in a skillet, place the sausages about 2 min per side, then remove them and add the cheese and poblano peppers chopped. Once the cheese has fully melted add it to the warm flour tortilla, followed by the sausages, pickled onions and top off with fresh guacamole salsa.
