Ingredients
1 pound thinly sliced steak
1 French bread loaf
1 pound shredded Oaxaca cheese
1 medium onion, sliced
Chimichurri Sauce
½ cup olive oil
1 bunch parsley, chopped
2 teaspoons chili flakes
1 teaspoon dried oregano
3 tablespoons red wine vinegar
Salt and pepper, to taste

Directions
Step 1
Preheat your griddle or skillet on high heat
Step 2
Add the sliced onions to the hot griddle and cook until they are caramelized, about 5-7 minutes, then remove and set aside.
Step 3
Season the thinly sliced steak with salt, pepper, and garlic. Cook the steak on the griddle until nicely charred, about 3-5 minutes per side, then remove and place in a bowl.
Step 4
In a bowl, combine the olive oil, chopped parsley, chili flakes, oregano, red wine vinegar, salt, and pepper. Mix well and set aside.
Step 5
Preheat the oven to 400°F (200°C) Slice open the French bread loaf and remove the soft interior Layer half of the shredded Oaxaca cheese inside the bread, followed by the caramelized onions and cooked steak Top with the remaining cheese.
Step 6
Place the stuffed bread on a baking sheet and bake in the preheated oven for about 10 minutes or until the cheese is melted and caramelized.
Step 7
Remove the bread from the oven and top with the prepared chimichurri sauce Slice and enjoy
