Ingredients

2 lbs skirt steak

16 corn tortillas

Salt to season

1 large tomato

1 large jalapeño pepper

¼ sweet onion

1 tbsp cilantro

1 Juice of lime

3 garlic cloves

Salt and pepper to taste

Directions

Step 1

Preheat your grill to 350 degrees Fahrenheit. Ensure that the grates are clean and oiled to prevent the steak from sticking.

Step 2

While the grill is heating, prepare the salsa. Begin by chopping the tomato, jalapeño pepper, and sweet onion into small pieces. Mince the garlic and chop the cilantro. Add all the ingredients to a blender.

Step 3

Squeeze the juice of one lime into the blender and add salt and pepper to taste. Blend the ingredients until smooth and set aside.

Step 4

Take the 2 lbs of skirt steak out of the refrigerator and let it come to room temperature for about 20 minutes. This will help the steak cook evenly.

Step 5

Season the steak with salt or your favorite steak seasoning. Generously season both sides of the steak.

Step 6

Place the steak on the preheated grill and sear for 5 minutes on each side. This will help to develop a nice crust and lock in the juices.

Step 7

Remove the steak from the grill and let it rest for 10 minutes. This will allow the juices to redistribute and will result in a juicy and tender steak.

Step 8

While the steak is resting, warm up the 16 corn tortillas. You can do this by wrapping them in foil and placing them on the grill for a few minutes or by microwaving them for 30 seconds.

Step 9

After 10 minutes, slice the steak into bite-sized pieces against the grain.

Assemble the tacos by placing a few pieces of steak on each warm tortilla and topping with the prepared salsa. Serve immediately and enjoy!
