Ingredients

1 lb ground chicken

2 tbsp mayo

2 tbsp minced onions

¼ cup panko bread crumbs

1 minced garlic clove

1 tbsp chopped parsley

1 tsp paprika

1 tsp your favorite chicken seasoning

¼ tsp black pepper

16 sliced cheddar cheese

4 tbsp mayo

For the Assembly

8 slices sourdough bread

Buffalo sauce

Directions

Step 1

Start off by mixing the ingredients. In a bowl, add the chicken, parsley, garlic, mayo, panko bread crumbs, paprika, chicken seasoning and combine thoroughly. Then form 4 equal meatballs.

Step 2

Now preheat your griddle on medium-high heat, I added some cooking oil then I placed the meatballs on the griddle and smashed them as flat as I could with my burger smasher. You can use 2 spatulas.

Step 3

Give the patties about 3 min per side then remove.

Step 4

Now let’s assemble! Grab the sourdough bread and add mayo, followed by 2 slices of cheddar cheese, then the chicken then 2 more slices of cheddar cheese. Then add mayo to the outside of the bun, this is optional, you can choose to add butter.

Step 5

Now place it on the griddle and turn the heat to low, check on the bread after 2 min and see if it’s nicely browned. If it is add more mayo to the top of that bun, and flip, place a heavy object on top of the sandwich and wait another 2 or so minutes and see that the cheese has melted. Then remove and let cool for one min, now open the top part of the sandwich and add buffalo sauce.

Notes

You can use any other bread. I love sourdough, just seems to hold up better for this kind of cook. Did you enjoy this Buffalo patty melt? You’ll love my other chicken recipes in the link below!
