Ingredients
1 ½ lbs sirloin steak, sliced into strips
1 lb broccoli, blanched
Salt and black pepper, to taste
Sesame seeds, for garnish
For the Sauce
1 tsp ginger powder
2 tsp garlic paste
½ cup warm water
6 tbsp Tamari sauce or soy sauce
3 tbsp packed light brown sugar
1 ½ tbsp corn starch
¼ tsp black pepper
2 tbsp sesame oil
Directions
Step 1
Begin by preparing the beef and broccoli. Slice 1.5 lbs of sirloin steak into thin strips, making sure to cut against the grain for the most tender results. Cut the broccoli into bite-sized crowns, discarding any tough stems or leaves. Fill a large pot with water and bring it to a rolling boil over high heat.
Step 2
Once the water is boiling, add the broccoli crowns and let them blanch for 1 minute. Blanching will soften the broccoli and help to brighten its color. After 1 minute, use a slotted spoon or tongs to remove the broccoli from the pot and transfer it to a plate. Let it cool while you prepare the sauce.
Step 3
In a small mixing bowl, whisk together the stir fry sauce ingredients. Combine 1 tsp of ginger powder, 2 tsp of garlic paste, 1/2 cup of warm water, 6 tbsp of Tamari sauce or soy sauce, 3 tbsp of packed light brown sugar, 1 1/2 tbsp of corn starch, 1/4 tsp of black pepper, and 2 tbsp of sesame oil. The sauce should be well combined and free of any lumps or clumps of corn starch.
Step 4
Preheat a griddle or large frying pan over medium heat. Once the pan is hot, add the blanched broccoli crowns and season them with salt and black pepper. Toss the broccoli frequently to help it brown and char evenly. Once the broccoli is nicely browned and crisp-tender, remove it from the griddle and transfer it to a plate.
Step 5
Increase the heat to high and add the beef strips to the griddle. Season them with salt and black pepper, and toss them frequently to ensure even cooking. Sear the beef strips for 2-3 minutes, or until they are nicely browned on all sides.
Step 6
Reduce the heat to medium and pour the stir fry sauce over the beef strips. Use tongs or a spatula to toss the beef and sauce together, making sure that the beef is well coated in the sauce. Allow the sauce to come to a simmer and cook for 1-2 minutes, or until it thickens slightly.
Step 7
Add the broccoli crowns back to the griddle and toss them with the beef and sauce. Make sure that everything is well combined and that the sauce is evenly distributed. Cover the griddle with a lid or foil and reduce the heat to low. Let the beef and broccoli sit for 5 minutes to allow the flavors to meld and the sauce to reduce and thicken.
Step 8
After 5 minutes, remove the lid and give the beef and broccoli a final toss to ensure that everything is evenly coated in the sauce. Taste the beef and broccoli and adjust the seasoning as needed. Serve the beef and broccoli over steamed rice, garnishing with sesame seeds for a nutty and flavorful finish.
