Ingredients

1 can coconut milk
2 tbsp red curry paste

Step 1
Chop about a quarter of your pumpkin off. Remove the seeds and skin before slicing into cubes.

Chop onions and add to a pan with oil and salt

Once the onions are translucent, add in chopped garlic.

Once the garlic is toasted, add in coconut milk and curry paste and mix together well.

Add in your chopped pumpkin and let simmer for about 20 mins or until fork tender.
