Ingredients
2 cup cooked rice
¼ cup shallots
¼ cup bottom part of green onions
2 tbsp minced garlic
4 whole eggs separated
4 tbsp oil
1 tsp salt
3 tbsp soy sauce
1 tsp fish sauce
¼ cup cilantro
1 whole thai chili pepper
¼ tsp pepper
½ cup Mayo
1 ½ tbsp sriracha sauce
1 tsp garlic powder
1 ½ tsp smoked paprika
2 tsp lemon juice
Directions
Step 1
First separate 4 eggs from whites and yolk
Step 2
on medium low heat, put in 3 tbsp oil and add in shallots and cook until translucent. Then add in bottom part of green onions, add 1/2 tsp salt and cook for about 3 mins and then add in minced raw garlic and cook until its light brown. Then add in egg whites. You can put in more oil to adjust.

Step 3
Once egg whites are cooked, add in 2 cups of cooked rice, soy sauce, and fish sauce and stir. Then turn the heat to low and add in egg yolks and stir and cook for another 3 mins. Turn off the heat and garnish with green onions, cilantro and thai chili peppers. Make sure to taste and adjust with salt and pepper.

To make the spicy mayo, combine all the ingredients below and add a pinch of salt.
