Ingredients
1 whole whole turkey
1 gallon peanut oil
3 tbsp hot paprika
3 tbsp chili powder
3 tbsp salt
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp cumin
1 tbsp coriander
1 tbsp ground ginger
2 tsp turmeric
1 tsp sage
1 tsp thyme
1 tsp oregano
1 tsp cayenne pepper
1 stick butter
8 cloves garlic
2 tbsp olive oil
cilantro
thai chili pepper

Directions
Step 1
Combine the ingredients below in a bowl for your spice mix.

Step 2
Thoroughly coat the turkey with the seasoning mix, massaging it beneath the skin and over the outside.

Heat your peanut oil to 400F, this can take up to an hour.

Pat the turkey dry inside and out, then CAREFULLY lower the turkey into the oil. EXPAND this line for more safety tips. Fry for 3 mins per pound before removing and placing on a wire rack where it should sit for at least 15 mins.

Keep turkey fryer outside away from decks, trees or other objects that could easily burn.
Step 6
Make sure the turkey is fully thawed before frying. Pat down dry to elminate any moisture.
Step 7
Place the fryer on a level, sturdy surface.
Step 8
Turn off the burner while lowering the turkey into the oil. Once it's in, turn the burner on again.
Step 9
Keep the burner 2 feet away from the fryer.
Step 10
Avoid water based marinades.
Step 11
Melt butter and combine with minced garlic, olive oil, chopped cilantro and chopped thai chili pepper.
