¼ cup soy sauce

1 tbsp minced garlic

1 tbsp minced ginger

1 tbsp green onion stem

1 tsp oyster sauce

1 tsp rice vinegar

½ tsp fish sauce

½ cup water

½ tsp sesame oil

Steam the eggplants

1 large eggplant

saute the eggplants on medium heat with oil

saute the ingredients you see below until its browned

1 tbsp minced garlic

1 tbsp minced ginger

Combine the ingredients you see below, bring it boil and let it simmer for 5 mins.

1 tsp rice vinegar

turn off the heat and sesame oil

½ tsp sesame oil

Put the sauteed eggplants back in and put some sauce over top of it

Toast your bread, put some ricotta cheese, add some sauce and put the eggplants, garnish with green onions and thai chili peppers.
