Ingredients
½ onion, diced
3 clove garlic, sliced thin
2 tbsp calabrian chili, diced
½ cup tomato paste
1 tbsp butter
¼ cup vodka
½ cup heavy cream
1 cup parmesan cheese
1 lb rigatone pasta
½ cup olive oil
1 tbsp crushed red pepper flakes

Directions
Step 1
Start by boiling pasta water with some salt.

In a separate pan, add olive oil and start sweating onions. Add a pinch of salt, and continuously mix without browning. About 5 mins

Step 3
Add your Calabrian Chili’s and garlic, and cook about 30 seconds. Add more oil if needed

Add the tomato paste, mixing and cook for about 2 minutes.

On high heat, add the vodka and reduce about 80% volume. Mix.

Add heavy cream, mix and set aside.

Add your pasta to boiling water, cook until 1-2 mins shy of al dente.

Add your pasta to the sauce, with a good spoonful of pasta water. Mix and let cook about a minute.
Step 9
Kill the heat, add butter and cheese, mix. Add more pasta water if thick. Add salt to adjust seasoning. Plate and enjoy!
