Ingredients

Fried Chicken

1 gallon Cold water

1 cup kosher salt

3 tbsp sorghum syrup

3 bay leaves

1 Garlic, head halved

4 sprigs fresh rosemary

bunch thyme

3 Lemon, halved

1 bunch italian parsley

handful peppercorns

3 lb chicken

as needed canola oil

to taste sesame seeds

Spicy Sauce

2 tbsp avocado oil

1 Onion, medium size, diced

10 cloves Garlic, minced

1 inch Ginger, piece minced

3 tbsp Sugar

2 cup sake

1 cup Ketchup

1 cup Tabasco sriracha

½ cup soy sauce

½ cup rice vinegar

Breading

2 tsp white pepper

2 tsp black pepper

2 cup all-purpose flour

¼ tsp cayenne pepper

½ tsp paprika

4 tsp garlic powder

4 tsp onion powder

3 tsp kosher salt

Directions

Fried Chicken

Step 1

Cut chicken. Separate breast, thighs, drumsticks, and wings. Cut breast in half to create 2 pieces.

Step 2

In a large pot, combine all brining ingredients and bring to a boil. Immediately remove from heat and refrigerate until completely cold.

Step 3

Transfer liquid to container and add chicken. Brine chicken 8-10 hours in fridge.

Once chicken has brined, remove from liquid and rinse under cold water and pat dry.

Step 5

Combine breading ingredients. Coat each piece of chicken well, and refrigerate again for 2 hours. This is to really adhere the batter to the chicken.

Step 6

Meanwhile make spicy sauce. Set sauce aside.

Step 7

Remove chicken from fridge and give one extra coating, packing in as much breading As possible. Set deep fryer to 325F. Use canola oil.

Fry in small batches, cook each batch for 15 mins, until golden brown. Toss in sauce at end, garnish with sesame seeds. Enjoy!

Spicy Sauce

Step 1

In a sauce pot, add oil over medium heat. Add onion, cook about 7 mins.

2 tbsp avocado oil

Add garlic and ginger, cook additional 3 mins.

Step 3

Add sake and boil for 4 mins.

Drop heat to low. Add the rest of the ingredients and cook for 20 mins.

1 cup Ketchup

½ cup soy sauce

½ cup rice vinegar

Step 5

Set sauce aside.

Breading

Step 1

Combine all breading ingredients.
