Ingredients

500 gram all-purpose flour

½ tsp baking soda

5 tbsp corn starch

300 gram butter, melted

2 eggs, whole

4 egg yolk

280 gram dark brown sugar

150 gram white sugar

150 gram hazelnuts, chopped

400 gram dark chocolate

60 gram chocolate chips

tbsp salt

Directions

Step 1

In a mixer, using whisk attachment (speed 2 on kitchen aid) add sugars and mix. Add in melted butter and eggs and mix.

150 gram white sugar

280 gram dark brown sugar

300 gram butter, melted

2 eggs, whole

4 egg yolk

Step 2

Combine flour, cornstarch, and baking soda and mix well. Slowly add into mixer until fully incorporated.

500 gram all-purpose flour

5 tbsp corn starch

½ tsp baking soda

Step 3

Change attachment to paddle. Add in chocolates, chopped hazelnuts, and mix (speed 2 until fully incorporated)..

400 gram dark chocolate

60 gram chocolate chips

150 gram Hazelnuts

Step 4

Transfer to mixing bowl, cover, and refrigerate at least one hour.

Step 5

Pull from fridge, and form until large balls. Should make about 15. Cover and put in freezer, about 1 hour.

Step 6

Set oven to 425F bake. Pull cookies from freezer, transfer to baking tray lined with parchment or silpat, bake for 14-16 mins.
