Ingredients

Pork

2 lb pork belly

4 dashima, pieces

8 cup water

2 tbsp ginger

1 onion

5 cloves garlic

1 leek, top removed

3 tbsp Doenjang

2 tbsp mirin

2 tbsp coffee

2 tbsp olive oil

1 tbsp peppercorns

Radish Kimchi

1 korean radish

7 tbsp sugar

2 tbsp salt

1 tbsp red pepper paste

½ cup red pepper flakes

2 clove garlic, minced

1 korean pear

1 bunch korean chives

2 green onions

¼ cup light corn syrup

2 tbsp fish sauce

2 tbsp olive oil

1 tbsp peppercorns

2 tbsp sesame seeds

Shrimp Paste

2 tbsp korean salted shrimp

½ tbsp red pepper flakes

2 tbsp green onions

2 clove garlic, minced

1 tsp sesame oil

1 tsp sesame seeds

Salted Cabbage

1 napa cabbage

as needed salt

Directions

Pork

Step 1

In a large pot, boil water with the dashima about 15 mins, then remove.

Step 2

Add ginger, leek, garlic, onion, doenjang, coffee, mirin, olive oil, peppercorns, and pork. Cover with lid or cartouche, simmer low for 1 hour.

Step 3

Once the pork is done cooking, remove meat and transfer to cutting board. Let cool for about 5 mins. Slice thin about half inch.

Step 4

Plate all ingredients on a large platter and enjoy!

Radish Kimchi

Step 1

Start by cutting the radish and coating it in sugar and salt. Let sit for 1-2 hours to lose water.

Step 2

After 1 hour, drain excess water from radish and transfer to mixing bowl.

Step 3

Add the pepper flakes, paste, garlic, corn syrup, fish sauce, green onion, pear, Korean chives, and mix well. Store in fridge.

Step 1

Combine all ingredients and store in fridge.

Step 1

Cut the cabbage in half, transfer to mixing bowl.

Salt the leaves, and all over. Pour hot water over, and cook about 3 mins. Move to ice bath and drain. Slice root off
