Ingredients

½ pound pasta

2 tablespoons butter

1 tablespoon olive oil

3 cloves garlic, minced

5 ounces tomato paste

1 cup heavy cream

½ cup grated Parmesan cheese

4 slices prosciutto

4 ounces burrata cheese

Step 1
Cook the Pasta
Step 2
Cook pasta until al dente. Reserve 1/2 c pasta water right before draining.
Step 3
Crisp the Prosciutto

While the pasta cooks, preheat your oven to 400°F (200°C). Arrange prosciutto slices in a single layer on a baking sheet. Bake for about 8 min or until crispy.
Step 5
For the Sauce
Step 1
Melt the butter and olive oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
Step 2
Stir in the tomato paste and cook for 1-2 minutes, until slightly darkened.
Step 3
Stir in the heavy cream, basil and seasonings. Add Parmesan cheese. Cook until the sauce is smooth and creamy, about 2 minutes. Taste and add additional seasonings.
Step 4
Add 1/4 c pasta water and cooked pasta to the pink sauce and toss to coat. Add a little of the reserved pasta water if needed to loosen the sauce.

Top each serving with crispy prosciutto pieces, burrata cheese, and extra parm.
