Ingredients

For the chips

1 14 oz bag Cape Cod Original Kettle Cooked Potato Chips

For the blue cheese fondue

1 cup heavy cream

1 cup vegetable stock or chicken stock

1 ½ cups shredded cheddar cheese, grated

5 oz Castello Blue Cheese, Double Creme

1 cup mozzarella

Directions

Step 1

For the blue cheese fondue

Step 1

In a small saucepan, combine the heavy cream and vegetable stock over medium heat.

Step 2

Once warm, gradually add cheddar cheese, stirring constantly until melted and smooth.

Step 3

Reduce heat to low and stir in the crumbled blue cheese until melted and combined. The fondue should be thick but pourable.

Step 4

Assemble and broil

Step 5

Pour 1/3 of the chips onto a serving dish, top with some blue cheese fondue, and repeat 2 more times or layer as desired.

Step 6

Top with the remaining chips and pour the rest of the fondue over them.

Step 7

Sprinkle with extra crumbled blue cheese.

Step 8

Broil in the oven for 1-2 minutes, or until the cheese is bubbly and slightly browned. Watch closely to avoid burning!

Step 9

Garnish with chives or bacon bits if desired.
