Ingredients:
8 chicken drumsticks
2 tbsp olive oil
¼ cup of flour
1 ½ cup of chicken broth
¼ Heavy Whipping Cream
Fresh Thyme
4 minced garlic cloves
½ yellow onion
Parsley
Seasonings:
1 tbsp EACH
All purpose seasoning (I use Chef Kysh)
Thyme
Rosemary
Poultry seasoning
Salt
Pepper
Paprika
Directions
Step 1
Season chicken well, add olive oil, mix and massage seasoning into chicken, getting behind skin of drumsticks or whatever piece of chicken you choose.
Step 2
Heat your cast iron(or pan) on a medium heat, add 1 tbsp olive oil, allow that to heat as well. Once heated add in chicken for 3 mins on each side.
Step 3
Remove from pan and set aside (chicken will not be finished cooking at this point). Turn heat down to a medium low (3/4 number on the stove knob)
Step 4
Add in butter and allow to melt down. Be sure to scrape the pan gently to remove the extra flavoring from the chicken cooking. Once butter melts, add onion and garlic.
Step 5
Allow to cook for 3-5 minutes until aromatic and add in your flour.
Step 6
Mix well and allow to cook for at least 1-2 minutes before adding in broth.
Step 7
Add broth slowly and mix well. After adding broth, add in some thyme, heavy whipping cream, and the chicken back into the pan.
Step 8
Cover and allow to heat for 25-30 minutes on a medium heat (4/5 stove knob number).
Step 9
After 25-30 minutes chicken will be done, serve with your favorite sides and a veggie!
