Penne, Tomatoes, and Vodka- A Love Story

Sometimes the only thing you need is a good bowl of pasta. I have always been a big fan of pasta, any kind with any sauce. But, something in the taste of this dish really let it be my number one. Perhaps it's the kick of the vodka or the flavor of the fresh tomatoes, what I know for sure is that I love it!

Ingredients

2 ½ tbsp. unsalted butter

4 cloves garlic, minced

8 - 10 tomatoes

2 tbsp. crushed red pepper flakes

¼ cup vodka

Kosher salt (by taste)

1 tsp sugar

½ cup heavy cream

1 pound of penne or rigatoni

2 tbsp. parmesan cheese

For serving

1 tbsp. fresh parsley or basil

Parmesan cheese by taste

Directions

Step 1

In a food processor puree the tomatoes and keep them for later.

Step 2

Cook the pasta in salted boiling water according to package directions, save 1 cup of the pasta water- IT'S GOLD.

Step 3

Heat a pan on medium-high heat and add the butter and the garlic and cook for 30 seconds, then add the red pepper flakes and cook for another 30 seconds.

Step 4

Add the tomatoes, salt, and sugar and simmer for about 6 minutes and add the pasta water, and vodka and cook for another 5 minutes.

Step 5

Stir the heavy cream and parmesan and give it another 5 minutes.

Step 6

Mix the pasta with the sauce and serve with fresh parsley and parmesan cheese.
