Ingredients
½ cup green pitted olives
2 heads of garlic
2 tbsp olive oil
Kosher salt, to taste
1 baguette
½ tbsp fresh oregano (optional)
⅓ cup grated or sliced Parmesan cheese
½ cup unsalted butter, softened
3 tbsp fresh parsley
1 cup shredded mozzarella cheese
For Serving:
Fresh parsley, chopped
Directions
Step 1
Preheat the oven to 400°F
Step 2
Slice the top off each garlic head (about ¼ inch) to expose the tops of the garlic cloves. Place the garlic on a baking sheet.
Step 3
Drizzle with olive oil, cover with foil, and roast for 40-60 minutes.
Step 4
After roasting, remove the garlic from the oven and let it cool. Then, adjust the oven temperature to 425°F.

In a food processor, combine softened butter, olives, parsley, Parmesan cheese, oregano, and squeeze the roasted garlic cloves out of their skins. Process until you have a smooth paste.

Slice the baguette horizontally and place it on a baking sheet.

Spread the garlic-olive butter mixture on the cut side of both bread halves. Top with mozzarella cheese.
Step 8
Bake in the oven for 10-15 minutes or until the cheese has melted and the bread is toasted. For a golden-brown finish on the cheese, broil for an additional 2-4 minutes. Watch closely while broiling to avoid burning.

Garnish with freshly chopped parsley and slice into even pieces.
