Hi! I’m Yarin, a home baker and cook.

My culinary journey began as a teenager, inspired by my mom, an incredible cook. She taught me the basics, and from there, I put my own spin on things. My style is mostly Mediterranean-inspired, but I love experimenting with different flavors and cuisines.

One of my favorite things to do on a Sunday is to open the day with fluffy, soft, and sweet buttermilk pancakes. I have been obsessed with this recipe for a couple of years now and I promise you that it will make your day and weekend so much better!

Fluffiest Buttermilk Pancakes

Make Buttermilk: If using the milk and lemon juice option, mix 1 tablespoon lemon juice with 2 cups of whole milk and let sit for 5 minutes to thicken.

Whisk Dry Ingredients: In a large bowl, whisk together the flour, salt, sugar, baking powder, and baking soda.

Mix Wet Ingredients: In another bowl, whisk the egg yolks, melted butter, and vanilla extract. Then, add the buttermilk.

Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix to keep the batter light and airy.

In a separate bowl, beat the egg whites until they form soft peaks (optional: add 1 tablespoon sugar to help stabilize the whites). Gently fold the whipped egg whites into the batter for extra fluffiness.

Heat a large non-stick pan to a medium heat

Cook the Pancakes: Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter per pancake onto the griddle. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on the other side.

Serve with butter, maple syrup, ,chocolate, or anything you like
